Ingredients

200 grams of Mushrooms

150 grams of Dried mushrooms

5 cups of Warm water

1 Onion

1 Garlic clove

2 Celery stalks

1 Carrot

¼ cup of White wine

6 Thyme sprigs

2 tablespoons of Butter

1 liter of Water

1 Dehydrated chicken broth cubes

100 grams of Rice

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The mushrooms are soaked in warm water for 30 minutes and then drained, reserving the liquid.

Step 2 : Next, clean and slice the mushrooms, reserving some for decoration and chopping the rest.

Step 3 : Wash and finely chop the onion, celery stalks, and carrot, then crush the garlic, setting all ingredients aside.

Step 4 : In a pot, melt the butter and add the chopped garlic, carrot, onion, and celery, cooking over low heat for 5 minutes, stirring occasionally.

Step 5 : Then, add the mushrooms, the reserved soaking water, white wine, and dehydrated chicken broth, cooking slowly for 30 minutes.

Step 6 : Meanwhile, cook the rice in salted water until nearly done, drain, and add it to the soup along with the reserved mushrooms and the thyme leaves.

Step 7 : Cook until the rice is tender, adjusting seasoning with pepper and salt.

Step 8 : Finally, serve the soup with mushrooms for decoration and garnished with garlic bread.
