Uruguayan-style Chupín
Ingredients
500 grams of Onion rings
200 grams of Red bell pepper rings
200 grams of Green peppers rings
200 grams of Yellow peppers rings
200 grams of Carrots sliced
200 grams of Cherry tomatoes sliced
500 grams of Potatoes sliced
1 kilogram of Firm fish
1 Garlic
1 teaspoon of Ground chili
1 pinch of Salt
Smoked paprika
2 Bay leaves
Olive oil
½ liter of Vegetable broth
¼ liter of White wine
1 pinch of Pepper
Preparation
Step 1 : In a deep skillet, pour the olive oil and aromatize for 1 minute, adding ground chili, crushed peppercorns, bay leaves, and oregano.
Step 2 : Then, remove the oil from the skillet and set aside to season the layers.
Step 3 : In the same skillet, layer the onions, peppers, carrots, tomatoes, and potatoes, seasoning each layer with the prepared mixture.
Step 4 : Let it cook for 10 minutes, then add the wine and cook for another 5 minutes.
Step 5 : Next, add the broth and let the potatoes cook with the skillet partially covered.
Step 6 : On the top layer, place the seasoned fish and cook with the skillet covered for an additional 10 minutes to allow the fish to steam and absorb the flavors.
Step 7 : Finally, let it rest for a few minutes without uncovering the skillet.
