Pamplona Criolla
Ingredients
2 chicken breasts
150 g smoked bacon
100 g mozzarella cheese
100 g sliced cooked ham
Fresh basil leaves
3 large potatoes
Oil for frying
Salt
Pepper
Preparation
Step 1 : Slice the chicken breasts in half and place a slice of cooked ham, mozzarella cheese, and basil leaves on each. Season to taste.
Step 2 : On plastic wrap, arrange overlapping slices of bacon and place the chicken breasts on top. Roll them up in the bacon, wrapping the chicken, and close the ends.
Step 3 : Cook the Pamplonas in boiling salted water for 15 minutes. Drain, let rest, and remove the plastic wrap. Sear in a hot skillet or grill with oil until golden.
Step 4 : For the fries, peel and cut into thin strips. Fry in hot oil and season. Serve alongside the Pamplonas Criollas.
