A delightful combination of capón lamb thigh with homemade noodles, bathed in an aromatic and delicious tomato sauce. Perfect recipe to enjoy on any special occasion.
Prepare the thigh for cooking with salt, pepper, and nutmeg.
Put the oil, chopped vegetables, and garlic in a pot; stir for a few minutes, then add the thigh and a piece of bacon to heat.
Let the capón meat develop color on both sides, then moisten it with wine, reduce almost completely, lower the heat, add the tomato sauce, dilute the parsley and oregano in water, continue cooking with the pot covered over moderate heat, adding a few tablespoons of water if the juice becomes too thick.
Once the noodles are cooked, drain them and add butter and grated cheese; arrange them around the meat.
The rest of the sauce is served in a separate sauceboat.
Serve very hot.
Lamb Thigh Capón with Noodles
Ingredients
1 ½ kilogram of Lamb thigh
200 grams of Bacon
½ liter of Oil
1 cup of White wine
1 Onion
2 Tender carrots
2 Crushed garlic cloves
1 pinch of Salt
250 grams of Tomato sauce
250 milliliters of Water
1 Parsley bunch
1 pinch of Oregano
½ kilogram of Noodles
100 grams of Grated cheese
Preparation
Step 1 : To start, season the lamb thigh with salt, pepper, and nutmeg.
Step 2 : In a pot, brown the thigh along with the bacon, chopped vegetables, and garlic.
Step 3 : Then, deglaze with white wine, reduce, and add the tomato sauce diluted in water, along with parsley and oregano.
Step 4 : Cook over moderate heat until the meat is tender and the sauce thickens.
Step 5 : Meanwhile, cook the noodles separately, drain them, and add butter and grated cheese.
Step 6 : Finally, place the noodles around the meat and serve with the sauce on the side.
