Ingredients

2 kilograms of Matambre

200 grams of Smoked bacon

1 Red bell pepper

2 Green peppers

3 Carrots

4 Boiled eggs

1 cup of Green peas

1 teaspoon of Hot chili powder

60 grams of Oregano leaves

60 grams of Parsley leaves

60 grams of Bay leaves

1 teaspoon of Black pepper

2 tablespoons of Olive oil

1 teaspoon of Salt

Preparation

Step 1 : On a clean surface, place the piece of matambre and add the seasonings: salt, herbs (parsley and oregano), and pepper.

Step 2 : Then, place carrots, sliced bell peppers, and green peas in a skillet, adding oil and salt.

Step 3 : Pour this mixture over the stretched-out matambre, along with sliced smoked bacon and boiled eggs.

Step 4 : Proceed to roll up the meat, ensuring no ingredient is left outside, and tie it with kitchen twine, making sure everything is compact.

Step 5 : In a pot, add water, bay leaves, and the prepared rolled-up meat.

Step 6 : Let it boil for at least two hours.

Step 7 : Once ready, remove the matambre and let it cool without cutting the twine to keep the ingredients firm.

Step 8 : Place it in the refrigerator until cooled, then remove the twine, slice the matambre into rounds, and serve accompanied by vegetables.
